What a cookie is
A cookie is a small file that a website asks your browser to store. It lets the site recognise your browser on a later visit, or keep a setting between pages. The same idea covers a few related technologies, such as local storage and pixels, and we use the word "cookie" here for all of them.
What we actually use
This is a short list on purpose. We do not run advertising cookies, we do not build profiles, and we do not share anything with ad networks.

Until you press Accept, the Google Analytics script is never added to the page. That is not a setting we flip afterwards: the script is simply not requested, so no cookie is written and no data reaches Google.
Changing your mind
Use the Cookies link at the bottom of the site. It clears your stored choice and asks again. Choosing "essential only" after having accepted also deletes the Google Analytics cookies we can reach from the browser.
You can also block or delete cookies in your browser. Every browser handles this in its privacy or settings menu, and its own help pages explain it better than we could. Blocking everything will not break this site. The contact form is the only part that depends on a third party, and that one is not a cookie you can opt out of and still submit.
